Gastronomy

As in all of Italy, gastronomy occupies an important place in the daily life of the population.
There are many typical dishes in Puglia, here are the main ones. But you may also find
others.

Taralli

Taralli are delicious small round salted cookies. They are often served as an appetizer. They are prepared with olive oil and white wine and have a crunchy texture.

Panzerotti

Panzerotti are discs of dough filled with mozzarella, tomatoes, salt, pepper, grated pecorino, closed in the shape of a half moon and fried.

Burrata

Burrata is a fresh, creamy blend of cream and mozzarella cheese. Simply add a drizzle of olive oil, a few arugula leaves and a few tomatoes, serve with bread, and the burrata is ready to be enjoyed.

Orecchiette

Orecchiette are pasta in the shape of cups. The recipe that best represents Puglia is "alla cime di rapa", broccoli and rabe that are cooked at the same time as the pasta. A drizzle of olive oil and garlic are added and the dish is ready and delicious.

Focaccia

Focaccia is a soft flat bread that can be eaten alone or with different ingredients such as tomatoes, rosemary, cheese or meat. The dough is made of flour and potatoes and is crispy on the outside and very soft on the inside.

The trulli

The trullo (trulli in plural) is a typical rural construction of the Murgia dei Trulli, a plateau located between the cities of Bari, Brindisi and Taranto, in the region of Puglia (see section Puglia) in the "heel" of Italy.
As you will often read, trulli have crossed the centuries and generations. The first examples resembling very closely those we know today were built in the prehistoric period. They were tholos, rounded buildings that were used to bury the dead.
The oldest trulli that can be seen today are those of Alberobello, dating back to the 14th
century. But the first ones were probably built around the year 1000.
